TL;DR;
Pat your steak dry with a paper towel, season with salt and let it dry inf the fridge for at least 2 hours. Take it out of the fridge in advance to bring it to room temperature, around 1-2 hours before cooking. After air-frying at a low (60 ° Celsius / 140 ° Fahrenheit) temperature for approximately 30 minutes, finish with a quick sear for the perfect bark and you'll have a steak that is tender and bursting with flavour & juices.

Choose a reasonably thick steak (2.5-4cm or 1-1.6 Inches)
Pat your steak dry with a paper towel to remove any excess moisture then generously season it with your favourite salt. Don't be afraid to be generous with the salt!
Pop the steak in the fridge to assist with salt absorption and drying out.
The steak should be in the fridge for at least 1.5 hours.
Before cooking, take the steak out of the fridge for at least 2 hours to adjust to room temperature.
Pre-heat your Air Fryer to 60 ° Celsius / 140 ° Fahrenheit.
After your Air Fryer is heated, carefully place the steak in the center of your Air Fryer's cooking rack.
Connect your sensor to the thickest part of the steak from the edge (shown above). If you have an app, set the alarm to the desired temperature.
Once your steak achieves an internal temperature of 53 ° C / 127 ° F for medium-rare (add 5 ° extra for medium, 12 ° for medium and add 20° for well done) remove it from the Air Fryer. The steak should achieve this internal temperature in 30-42 minutes (depending on steak thickness).
At this point, the steak will be unfinished but needs to be rested for at least 15 minutes. This allows the fibers of the meat to absorb the juices from cooking.
Resting the steak before searing means it is good to go once you achieve a perfect bark.
While the steak is resting, prepare a pan or hotplate with oil. Add this over a hot heat - we want the oil to be at smoking temperature.
Make sure you get the fat-cap on top of the steak also!
Slice against the grain where possible.
